It’s great for using up leftover rice and random veggies that you have in the fridge. Brown rice makes a great base for this healthy and nutritious dish that takes little time to make. Take your pick of vegetables, and cut them up into small pieces. Red cabbage, spring onions, carrots, broccoli and cauliflower create a colourful concoction. Cook the rice, vegetables and eggs separately and toss together before serving. Korean Bibimbap Bowls If you love Asian food that is served in a bowl, this is the perfect dish for you. Korean bibimbap bowls feature lots of fabulous ingredients that are brought together with spicy Gochujang sauce. Although this dish usually includes plain white rice, a selection of vegetables, beef and a fried egg, you can easily swap the meat for protein packed, pan-fried firm tofu. Szechuan Noodles Another dish that boasts a fantastic flavoursome sauce is Szechaun noodles. As a rule, your quota of brightly coloured fresh vegetables should be greater than the amount of noodles or rice that you use. Go for broccoli, edamame, bell peppers, spring onions and mushrooms, or use up leftover veggies. To make the terrific teriyaki sauce, mix soy sauce, water, garlic, ginger, honey, and sesame oil, and some cornstarch to thicken the sauce as it cooks.
